I first saw the scoopable cheesecake format over on Butternut Bakery, who did a summer version, and I could not stop thinking about it. This one is not a good candidate for the freezer bag or the freezer in general. Ingredients
For the Caramel Sauce (Do First):
- 1 cup granulated sugar
- ¼ cup water
- 3 tablespoons light corn syrup
- ¾ cup heavy cream
- 2 teaspoons pure vanilla extract
- 1 teaspoon salt
- 1 tablespoon unsalted butter added to the caramel at the end
For the Graham cracker crumbs
- ⅓ cup graham cracker crumbs (about 8 full sheets
- 3 tablespoons dark brown sugar packed
- Pinch of kosher salt
- ¼ teaspoon ground cinnamon
- ¼ cup unsalted butter melted
Cheesecake
- 1 cup cold heavy whipping cream
- 16 ounces 452g full-fat cream cheese, softened to room temperature
- 1 cup 226g pumpkin puree
- ¾ cup powdered sugar
- ¼ cup packed dark brown sugar
- 1 teaspoon pure vanilla extract
- ¾ teaspoon ground cinnamon
- ¼ teaspoon salt
Instructions
For the caramel sauce
- In a medium heavy-bottomed saucepan, combine the sugar, water, and corn syrup. Gently stir to moisten all the sugar, then stop stirring.1 cup granulated sugar, ¼ cup water, 3 tablespoons light corn syrup
- Set the pan over medium heat and cook undisturbed for 5-10 minutes, until the mixture turns deep amber. Meanwhile, warm the heavy cream in the microwave for about 1 minute.¾ cup heavy cream

For the Graham Cracker Crumbs:

- Set aside while you prepare the cheesecake filling.
For the No-Bake Pumpkin Cheesecake Filling:
- In a large bowl or the bowl of a stand mixer with the paddle attachment, or with a electric hand mixer, white the cold heavy whipping cream on medium-high speed until stiff peaks form, about 2-3 minutes. Set aside (or transfer to another bowl, if using the same bowl for the next step).1 cup cold heavy whipping cream
- In a separate large bowl, (or the same one) beat the softened cream cheese on medium speed until smooth and creamy, about 1-2 minutes, with a rubber spatula, scrape down the sides and bottom of the bowl.16 ounces 452g full-fat cream cheese, softened to room temperature
- Add the pumpkin puree, powdered sugar, dark brown sugar, vanilla extract, cinnamon, and salt to the cream cheese. Mix on medium speed until fully combined and smooth, scraping down the sides and bottom of the bowl half way through. If you see cream cheese chunks, keep mixing on medium to low speed until its nice and smooth.1 cup 226g pumpkin puree, ¾ cup powdered sugar, ¼ cup packed dark brown sugar, 1 teaspoon pure vanilla extract, ¾ teaspoon ground cinnamon, ¼ teaspoon salt
- With the rubber spatula, gently fold the whipped cream into the pumpkin cream cheese mixture in two additions, folding just until no streaks remain - be careful not to overmix, or the filling will lose its light, scoopable texture.
Assembly
- Make sure your caramel is completely cool and not warm whatsoever.
- In your dish of choice , I used a deep pie dish. (or a 9x13 ceramic or glass baking dish), sprinkle half of the graham cracker crumbs evenly across the bottom.
- Drizzle about a third of the caramel over the crumb layer.
- Add all of the pumpkin cheesecake filling on top, smoothing it into an even layer with a spatula.
- Sprinkle the remaining graham cracker crumbs over the filling, then drizzle another third of the caramel on top.
- Cover and refrigerate for at least 8 hours, up to 24 hours, to allow the cheesecake to set.
- Serve using a spoon or a large ice cream scoop, with the remaining caramel on the side for drizzling.
