These Birthday Golden Oreo Blondies are filled with chunks of crushed Golden Oreos and my favorite rainbow sprinkles. You’ll love the chewy cookie texture, but with the ease of a bar, no scooping or shaping each cookie!
My Birthday Golden Oreo Blondies were inspired from my birthday cake, Golden Oreo Funfetti cake. I wanted to make a simpler version of a delicious dessert that wouldn’t take as much time as a cake. Let me tell you, these are so easy and will not disappoint!!!

Why you will LOVE this recipe
Easy to make- This recipe is so easy to make. It doesn’t even require a stand mixer! You can use a rubber spatula or even an electric hand mixer.
Chewy- They are delicious and chewy like a cookie, but fast and easy, since they’re a bar.
Little ingredients- They don’t require weird ingredients, mostly just things you already have on hand. You may need to pick up some Golden Oreos, but other than that, you should have everything on hand.
Oreo cookie base- In this recipe, you’ll grind up the Oreos and mix them right into the batter.
Ingredients you will need
Unsalted butter- I always use unsalted to help control the salt in my desserts. You will need to melt it for this recipe.
Egg- This recipe requires a whole egg and an egg yolk. The egg yolk helps keep the blondie chewy. Make sure your eggs are at room temperature.
Golden Oreos- This recipe doesn’t require a lot of them. A normal sized package will do.
Rainbow Sprinkles- I get mine at Walmart.
Corn starch- This is what keeps your cookies soft for up to three days. If you don’t have it, you can leave it out, but I highly recommend it.
Here are the step by step instructions
Step 1: Whisk the butter and the sugar. Whisk the melted butter and the sugar for about 2 minutes. You can use a normal whisk or an electric hand mixer. If you choose to do a stand mixer instead, use the paddle attachment.
Step 2: Add the eggs. Add the whole egg, whisk for 30 seconds, then add the egg yolk. Mix in the vanilla.
Step 3: Add the dry ingredients. Add in the flour, baking powder, corn starch, salt, and finely crushed Oreos, and mix on the lowest speed. Mix until there are only a few streaks of flour left.
Step 4: Fold in the sprinkles and the crushed Oreos. With a rubber spatula, fold in half of the chopped Oreos and the rainbow sprinkles, just until combined.
Step 5: Bake the blondies. Bake the blondies in a 9×9 pan for 25-30 minutes.
Baking tips
- I suggest using an aluminum a pan instead of a glass pan. I use this pan.
- Make sure your eggs are at room temperature. Because your butter is warm, you want the eggs to be about the same temperature.
- Prep your pan by using metal binder clips and clipping the parchment to the side of the pan.
Storing and freezing
These Birthday Golden Oreo Blondies should be stored in an airtight container or ziplock bag for up to 5 days at room temperature. You can also place them in an airtight container in the fridge for up to one week.
Freezing
They can be frozen in an air tight container for up to 2 months.
If you do choose to freeze them, I suggest pulling them out two hours before you want to eat them and letting them come to room temperature.
